Chicken Cacciatore Recipe By our President, William Mercantini for Dining with the Rotary Chefs
 
Our own President, William Mercantini, cooked during the Annual District 7505 Dining with the Rotary Chefs on January 27th, 2020. It was held at Lucien's Manor in Berlin, NJ.  The tickets that were purchased was a donation to The Rotary Foundation and counts toward Paul Harris recognition in your name. These funds support our local and global mission to enable Rotarians to advance world understanding, goodwill and peace through the improvement of health, the support of education, and the alleviation of poverty.
 
Chicken Cacciatore
5 to 6 oz chicken boneless chicken breast sliced thin and pounded out
Dredged in flour and pan fried till golden brown in good olive oil.
 
In separate stock pot combine
  • 1 package of sliced mushrooms
  • 1 large rough cut onion
  • Tarragon
  • Garlic to taste
  • 2 sticks of real butter salted
  • Generous portion of white dry wine
  • And olive oil to taste.
Once mushroom and onions are cooked and tender.
Add your chicken till all flavors are incorporated.
Serve family-style over rice or pasta of choice or alone
Garnish with fresh parsley.
